Description: This course is for people who work or want to work in the retail baking sector of the food processing industry and provides trade baking skills and knowledge for those working in hot bread shops, cake shops, franchises, in-store bakeries and similar outlets with a focus on cakes and pastry.

You will learn to produce and decorate a range of cakes, biscuits, pastry and yeast products including specialty products such as gateaux, tortes, petits fours and chocolate. You will also do sugar work and learn how to use baking equipment and machinery. You will also learn operational processes, and how to work safely and effectively in the retail baking sector.

Volume of Learning:
Your learning commitment (known as the volume of learning) for this qualification is a minimum of 780 hours. You may need to allocate hours to engage in a range of activities to support your learning which could include;

Fee explanatory text: The NSW Government’s Smart and Skilled reform has changed the way job-related training is provided, aiming at getting more people qualified for the jobs NSW needs. The applicable fees for this qualification will be determined at time of enrolment, as per the details on the respective NSW Skills List for your year of training commencement. Comments: Recognition:
Recognition is the process by which you can demonstrate you already have the skills or competencies taught in a unit or qualification. It is the recognition of the skills, knowledge and experience you have gained through previous studies, work and life in general. Put simply, it means if you can demonstrate you already have the skills and experience you can complete partial or a whole qualification without needing to attend classes.

There are two types of Recognition:
• Credit Transfer, which allows you to receive credit for unit/s of competency previously successfully completed.
• Recognition of Prior Learning (RPL), which is an assessment process of your previous skills, knowledge and experience to meet the requirements of the course you are enrolled.
