Description: This course is for people who work or want to work in the retail baking sector of the food processing industry and provides trade baking skills and knowledge for those working in hot bread shops, cake shops, franchises, in-store bakeries and similar outlets with a focus on cakes and pastry.

You will learn to produce and decorate a range of cakes, biscuits, pastry and yeast products including specialty products such as gateaux, tortes, petits fours and chocolate. You will also do sugar work and learn how to use baking equipment and machinery. You will also learn operational processes, and how to work safely and effectively in the retail baking sector.

It should be noted that your current enrolment is for a superseded qualification. This means that the most current qualification is not currently available for enrolment.
When the new course becomes available you will be automatically enrolled at no extra cost.

Tools and Uniform Requirements:

Neckerchief - Light Blue Short Sleeved White Chef’s Jacket Long Black and White Check Chefs’ Trousers 2 only White Bib Aprons or Waist Aprons White Hat – Beret, jockeys’ or chefs’
Solid Leather non-slip soled work steel cap boots (Safety Boots)- boots - black in colour (no suede, striped, canvas, plastic, running, jogging, sports shoes or sand shoes - no thongs)
Tools and Uniforms are available from the college bookshop.

You are required to wear the trade uniform to all practical lessons. Any hair longer than collar length or not close to the head must be contained under the hat or a hair net and hat.

Fee explanatory text: This training is subsidised by the NSW Government, and as a result your fee is determined through Training Services NSW formal eligibility criteria. This criteria will determine your exact fee. Students who meet additional specified criteria, may be eligible for a concession fee or a fee exemption. In claiming the concession or exemption students will be required to supply the required evidence to support the claim in accord with the requirements of Smart and Skilled eligibility.

Payment Plans are available through TAFE NSW for Smart and Skilled eligible qualifications.

To activate your eligibility you must pay the student fee component PRIOR to commencement of the learning activity.
